What Chocolate shall I use?
A good quality chocolate with high cocoa butter content is advisable
because when this chocolate is melted it becomes the right consistency
to be drawn up to the top of the fountain and cascade it's way down the
tiers with ease. Waitrose now stock a specialist fountain chocolate from
Giles and Posner, which needs nothing added and can be melted direct in
its own microwaveable pouch, which means less mess, washing up and less
time needed to get your taste buds wrapped around those juicy chocolate
covered strawberries. If you intend to use the more familiar chocolate
you will need an additive such as vegetable oil to get the chocolate to
the right consistency to be free flowing in the fountain. For 400g of
Lindt Excellence Dark Extra Fine Chocolate you will need to add 2 fluid
ounces (57ml) of vegetable oil. For 400g Cadburys Dairy Milk, add 2.5
Fluid Ounces (71ml) of Vegetable oil and 400g Galaxy Chocolate requires
3 fluid Ounces (85ml) of oil.
How Does The Chocolate Fountain Work?
A chocolate fountain is usually constructed of three separate pieces;
the base until which incorporates a heater and motor, a spiral which
forces the chocolate to the top and a selection of tiers from which the
chocolate flows over. It is always advisable to pre-melt the chocolate
in the microwave or on the stove in a ban marie. A ban marie is a
technical term for what is essentially a pan of gently simmering water
to which you add a heat proof bowl. The chocolate is then broken up and
melted in the bowl. Be careful not to get any of the water in the
chocolate as this can tern the chocolate thick and bitty. Once the
chocolate is melted, assemble your fountain, add the chocolate to the
base unit, switch on and away you go….a chocoholics dream!
Can I Use My Fountain For Things Other Than Chocolate?
Yes, try a cheese, chilli or barbecue sauce that is made to a thin
consistency with raw or al dente vegetables, pork, beef and chicken
cubes, prawns and assorted bread cubes for dipping. The chocolate
fountain just got versatile.
